April Foodies

Well Lincoln has figured out how to bring the stool from the bathroom into the kitchen and Dylan has half days at school all this week for parent/teacher conferences so I'll have a few extra hands in the kitchen. Not sure if it will be helpful, but hopefully they will have fun. We've had some unexpected circumstances come up so for this week I have planned some meals I know the kids will eat and then the rest of the month centered around Easter (and ham leftovers) and mainly using what is in the fridge and freezer. I asked Dylan what specifically he would want to eat this month and he said hamburgers and spaghetti and meatballs. I think I should be able to handle that. Since so many things are up in the air right now, this is very subject to change :)

April Menu Basic Plan
1. Leftover Pizza (thanks Mom and Dad!)
2. Sweet and Spicy Steak with bagged cherry almond salad
3. Mozzarella Stuffed meatballs and Spaghetti, veggie
4. Cheesy Enchiladas with rice and beans
5. Chicken Divan with rice and salad
6. MYO Pizza
7. Cheesy Quinoa Bites 
8. Spiral Sliced Ham, scalloped potatoes, pea salad
9. Baked Manicotti Florentine, breadsticks
10. Ham and Cheese Pinwheels x 2 one for freezer
11. Double Decker Tacos
12. Chicken and Dumplings
13. B4D - Ham and Hashbrown Casserole (like this but with ham in it), fruit salad
14. White Chicken Chili and corn bread
15. Hamburgers
16. Butternut Squash Macaroni and Cheese
17. Stir-Fry with funny noodles
18. Grilled bean burritos with mexican rice
19. Chicken Curry with steamed veggies
20. Chefs' choice
21. Mom might be out of town
22. Pork loin with mashed potatoes, bacon gravy and veggies
23. Pasta e fagoli  salad and breadsticks
24. Pulled Pork Sandwiches with sunshine cole slaw
25. Mexican casserole
26. Baked Chicken wings, corn onion pepper sautee
27. Pizza
28. Chefs' choice
29. Whole roasted Chicken with root veggies
30. White Bean Soup with salad and breadsticks

Things might get moved around or skipped over all together especially since Warner will be making his debut in a few short weeks but at least I still have something to plan with.

I'm also hoping to get a few things baked up before I take a break for a month or two including:
strawberry crisp to use up strawberries given to me
oatmeal fruit muffins of some kind (half in freezer)
no bake cookies
lemon tea cake
